Hofbäckerei Edegger-Tax Graz Delicious bakeries from the imperial era in Sporgasse 6 in GrazIn Graz's Hofgasse, a magnificent wooden shop portal - crowned with a gilded double eagle - immediately catches your eye: the Hofbäckerei Edegger-Tax, where delicious bakeries from the imperial era, such as "Sissibusserl" or "Kaiserzwieback", invite you to sample.You can feel the imperial-royal tradition as soon as you walk through the historic wooden portal. It is as much a part of Graz as the clock tower: fresh bread, delicious curd dumplings and tasty croissants. These delicacies are still prepared by hand in the Edegger-Tax court bakery today, using the knowledge and experience of past centuries. The history of the Edegger-Tax court bakery:The k. u. k. Hofbäckerei Edegger-Tax is the oldest family-owned bakery in Graz and one of the oldest in Austria. First mentioned in documents in 1569, the history of the bakery goes back to the 14th century. The bakery, which existed until the end of the 19th century and was then located in the house at Sporgasse 15, probably originated in the area surrounding the high medieval settlement core around today's Stiegenkirche. In 1787, Matthias Tax took over the bakery and made it one of the leading bakeries in Graz. In 1880 Franz Tax III acquired the property. the bakery at its current location at Hofgasse 6 and expanded it into one of the most prestigious bakeries. On the occasion of Emperor Franz Joseph I's stays in Graz, Franz Tax supplied the pastries for the imperial court table from 1883 onwards. On May 31, 1888, the “luxury and rusk baker” received the decree awarding the title of k. u. k. Court baker and the right to the k. u. k. Coat of arms of Austria-Hungary with the famous two-headed eagle. The magnificently carved oak portal with this eagle is still preserved in its original form and is a popular attraction for Graz residents and guests from abroad, as well as a fixed part of city tours. Franz Tax had it made in 1896 by the Graz master carpenter Anton Irschik.The merchant Franz Edegger, who married Herta Tax, the granddaughter of Franz Tax III. married, brought the business back on track after the Second World War. After the early death of Franz Edegger, his son Erich Edegger took over the leadership of the k. u. k. Court bakery. He and his wife Walheide modernized the traditional bakery business. Erich Edegger died early. Since 1992, his son Robert Edegger has been at the head of the k. u. k. Court bakery. Together with his wife Brigitte and his son Matthias, who is already a master baker himself and has been in the bakery since he was a child, he now directs the fortunes of the traditional business.
